When you've been operating for 11 years, have a chef's hat, and Restaurant and Catering names you Best Thai, you know you're doing something right. Peter Bowyer has been operating this establishment since its inception and, according to him, very little has changed. There are even two dishes on the menu that have been there for 11 years - the Yamba prawns with peanuts, chilli, lime and palm sugar dressing; and the oysters with green chilli and galangal sauce.Housed in a heritage-listed building in The Rocks, Sailor's Thai is divided into the restaurant downstairs and the canteen upstairs. The canteen entrance is off George Street and provides more casual dining for lunch and dinner six days a week. Seating is communal alongside an open kitchen, the atmosphere is turned up and the bill toned down. A side entrance takes you through a lobby, with an imposing concrete bar and a stone Buddha statue, into the more chic main restaurant. This is more upmarket dining, though still vibrant and upbeat. In summer you can enjoy the outdoor seating with a view of the Overseas Passenger Terminal and Circular Quay, whilst enjoying some of the best Thai cuisine Sydney has to offer.
